Peel and cut into diagonal slices. Heat oil. Add the onions and sauté till lightly browned. Add the ginger paste and sauté. Add the turmeric powder, coriander powder, red chili powder and salt. Add a little water if dry. Sauté till the oil surfaces. Add the lotus roots and potatoes and mix well. Add half a cup of water and cook till done. Add the tomato and cook till the gravy reduces and thickens. Sprinkle the all spice powder, garnish with coriander and serve hot.    Magnolia’s banana pudding: Ingredients   Condensed milk     one can (14 oz) Cold water     1-1/2 cups Vanilla pudding mixes   1 packet Cream       3 cups Bananas, sliced     5-6   Vanilla or egg biscuits   2 cups  Vanilla pudding mix Caster sugar    1 cup Corn flour     ¾ cup Dry milk powder   ¾ cu Salt     1 tsp  Vanilla essence    1 tsp  Method  For Vanilla pudding mix mix the sugar, corn flour, milk powder, vanilla essence and salt, set aside. To make pudding, combine 2 cups of milk with ½ cup of the pudding mix in a saucepan, bring to a boil and then immediately reduce the heat to a simmer and continue whisking until the mixture thickens and coats the back of a spoon. Whisk together the condensed milk and 1 1/2 cups cold water. Add the vanilla pudding mix and beat. The mixture should be smooth. Cover and refrigerate for 2-3 hours or overnight. Whip the cream until it forms stiff but soft peaks. Fold the whipped cream into the set pudding. To assemble the dessert, use a large glass bowl, trifle bowl, or individual cups. Place a layer of pudding in the bottom of the bowl, then layer of sliced bananas and a layer of egg biscuits. Repeat and end with pudding mixture on top. Cover and let chill for few hours. When ready to serve, slice a few bananas and decorate with more egg biscuits on top.    Parsi fish in pastry: Ingredients: Fish, fillet   ½ kg Onion    1 Green chilies   3 Ginger   1piece  Salt    ½ tsp Green chutney   1 cup Tomato ketchup   3 tbsp Red chili powder  1 tsp Brown sugar   2 tbsp Puff pastry    1 kg Egg     to brush  Method: Cook the fish in very little water with onion, ginger, green chillies and salt. Drain the water and flake when cool. Set aside. Mix the ketchup with the brown sugar and red chilli powder.  Roll out the puff pastry and in the centre first brush the green chutney, then put the fish and top it with the ketchup mixture.   Fold over the side of the pastry and seal ends with some water, so that they stick together.  Brush with egg.  Bake at 200 degrees c for around 25-30 minutes until puffy and golden.'
